But much of electrical theory was developed before Rutherford’s 1911 model of the atom as a nucleus surrounded by electrons, and thus current was assumed to flow from positive to negative. This model is commonly referred to as conventional current to distinguish it from electron flow. Really, it doesn’t matter as the equations work either way as long as you stay consistent.

Generally in energy systems the sign convention flows from high energy to low. In pressure systems (pneumatic or hydraulic), power flows from high pressure to low pressure. Likewise with essentially any potential energy system so the signs are consistent and the math will work properly with power flow and consumption...unless it's the FAA or the USN describing electricity. 1
