I think in terms of hull value, you would insure a B-17 just like you would insure a highly appraised piece of art.   Probably a pretty darn thin market if you could find insurance at all.  Definitely not in the same pool as GA, I'd think.

Liability is probably more predictable given the enormous liability pool throughout all of aviation.  Given the number of significant losses in recent years, probably quite expensive.
