I'm in Wills Point, Texas east of Dallas and west of Tyler. I'm wanting to start my IFR training. Working on the written now. Is there an experienced IFR trainer who's got Mooney time? I'd sure like to find one.

If you are comfortable landing and handling your Mooney in vfr, I don’t know that a “Mooney specific” instructor would be required. The most unique characteristics to the Mooney are not in approach patterns. 
I would prefer someone who understands my blend of avionics before an airframe type specialist. 
if you are still struggling with the basics, then mooney’s specific is probably best. 
this is not to disqualify available mooney guys, just provide you more options. 
 My ifr instructor got all of his Mooney time with me!

The biggest "Mooney" question for IFR training is how to set up your approach speeds/configuration.  You can do this yourself, and should, prior to flying with an instructor.

Approach level: gear up/flaps up, MP/RPM for level flight along the approach.  This would be your power settings for the majority of your IFR training and would be your typical setting for an IFR approach when you cross the IAF. 

Standard IFR/ILS descent: gear down/flaps up(or 10deg down), on your typical GP/GS steady descent (~500fpm).

IFR MDA level:  gear down/flaps up(or 10deg), level flight at your final IFR approach speed for a nonprecision approach with level offs.  Same speed as your ILS descent, but with increased MP to keep in level flight.

Write down MP, RPM, attitude indication (i.e. 3 deg nose low, etc), configuration (flaps/gear), VSI and IAS for each of your settings.  For approach level I even wrote down different MP for 120, 115, and 105 kts; it allows me to dial in the speed I want.

Missed approach would just be a powered up climb.  Typically for IFR training you'd go missed with approaches instead of landings.  But eventually you'd need power settings for IFR landing.  When I trained we either used no flaps or 10 deg flaps and for an IFR approach I'd typically only use 10 deg...IFR runways are typically plenty long and with a missed approach it doesn't cause a nose up event as much (easier to stay ahead of the aircraft).

These cover most of your scenarios.  I'd go out and figure out these speeds, settings, and write down your data.  With this info, you can fly with any IFR instructor as the standard logistics of IFR flight don't really change much from aircraft to aircraft...it's just the speeds, power settings and configurations that might.  If you have a Mooney CFI that you've worked with, they could easily go out and help you get these speeds/configurations dialed in.  MAPA also has a "IFR by the Numbers" for all the Mooneys that helps as a starting point.  I say starting point as there is not one way to fly approaches and your ultimate way in reality may be different than how you fly when training.  i.e. I've found that I need 5 miles and 2.5 min between chopping power and reaching steady state for new setting.  So "keeping speed up" on an approach might bypass the initial approach speed and just target slowing down prior to FAF to have everything configured and stabilized by the final approach fix.

Find a solid CFII that teaches well and has experience with your avionics/instruments/AP first and foremost.  If it's a Mooney pilot even better, but definitely not mandatory.  However expect a CFII without Mooney time will spend the first flight with you learning your aircraft about as much as instructing.
