Should there be a separate breaker for the AI, that is primarily vacuum driven anyway? I don't think my panel has one.

No, most only have turn coordinator breaker for standard 6 pack. I assume the altitude decoder is part of autopilot circuitry.

Regarding AI separate breaker......

This is why I suggested killing the G600 IMU.   A vacuum indicator won't have a separate breaker - it gets power from the autopilot circuit breaker.

I think the G600 does require a backup attitude indicator (just like an Aspen).

Removing the vacuum will save very little weight and will cost even more to replace, your aircraft will be down while its being done and the work might introduce problems.

I removed the vacuum pump, back up vacuum system, Artificial Horizon, and filter, added a Garmin G5 and increased useful load by 7.9 lbs.  All equipment was weight after removal and before installation of the G5.
