My yokes have the original plastic on them and it is flaking badly. When I am getting the avionics upgrade I intend on reworking them. 

I don’t know of anyone local that does leather wrapping, and given the hot and cold temp extremes here I’m not sure how that would last. 

A friend had a local gunsmith cerakote his piper yokes. I have also heard of people powder coating. 
 

Any one have experience/suggestions?

Also, I have the original centre cap pieces but they’re pretty rough - a prior owner screwed something into one of them. Has anyone 3D printed a centre cap? I’m thinking that could be more versatile if I want to attach a phone mount down the road.

There's a place in Texas called Aero Comfort. He does interiors and leather wraps Mooney yokes. I've never seen his work in person but pretty much everyone who ever posts about his work says it's amazing. I think he's usually pretty busy but it would be worth reaching out for a quote. His website is pretty good and you can check out his work there.

See if there is a local steering wheel shop that leather wraps steering wheels. I used a local shop near me and they turned out great:

Did you deliberately make the stitching go in opposite directions?

Just tell everyone you did it on purpose and the shop followed your instructions.  They look great!
